FOOD- Cowboy Lasagna (with tater tots)


Cowboy Lasagna  ~  It's super simple and wildly popular!


I have a weakness for comfort foods like hotdish (what we call casseroles in these parts).  They're even better if they involve a lot of cheese...and tater tots!  I was excited to try this recipe, and it was very quick and easy. 

Here is the recipe from the blog I pinned it from (linked under above picture).

Ingredients
1. 1 lb of ground beef
2. Minced onions - 4 tbsp
3. Worcestershire sauce - generous sprinkling
4. Parsley - roughly 3 tbsp, divided
5. One can of tomato soup - 10 3/4 ozs
6. One can of corn - 15.25 ozs
7. Dried ground mustard - 3 tbsp
8. One package of tater tots - 32 ozs
9. Salt and Pepper to taste
10. Mozzarella cheese - roughly 4 cups

Directions
1. Brown ground beef with spices - drain.  Add can of soup and can of corn, simmer for about 10 minutes.
2. In a greased 9x13 baking dish, arrange tator tots in single layer.  Cover with 2 cups of cheese.  Pour ground beef mixture over top and cover with remaining cheese and 1 tbsp of parsley.
3. Place in a 350F oven for 30 minutes.  Let stand for 5 minutes before serving.









4 cups of cheese is more than I've used in any recipe! I'm thinking if could be scaled down to 2. I also feel like a different kind of cheese would add more flavor. Maybe cheddar or a couple mixed. 

It turned out pretty good. While I was eating the leftovers the next day, I was wondering what it was lacking in flavor. I realized that I completely forgot to add any salt or pepper! I dipped it in ketchup and really enjoyed it. 




The only thing I might do differently is try to brown the tatertots first, or maybe even put them on top so they get a little crispy. They stay pretty soft when they are at the bottom of the pan!

  2. I've made it with Colby & Jack cheeses, salsa instead of soup, and shredded chicken... but since it's my original recipe, I play around with it a lot... lol.

    1. Hmmm, I'm not sure. It depends on if you mind soggy tater tots. You could try it with the mixture on the bottom and the tater tots on top and it might be better. Let me know what you try!

  5. I have made this and put the tator tots on the top (because I forgot about them until last). It did make them crisper. My family just loves it. Thank you for sharing this with us.
