FOOD- 2 Ingredient Pineapple Cake


I am a big fan of trying 2-3 recipe ingredients. Not only because I love easy recipes and they are harder to mess up, but because I'm always curious to know if they actually work (see last weeks post about 2 ingredient healthy cookies). 

This really was one of the easiest recipes ever.

 I just mixed together a box of angel food cake mix and a 20 oz can of crushed pineapple (in 100%juice, not syrup), and it did just what they said it would do!  It started frothing up as it mixed together! 


It smelled super sweet (reminded me of pistachio pudding smell), and I tasted the spoon before throwing it in the sink to wash. It was the most shocking taste! I couldn't tell if it was just very sour, or if it tasted like acid (which I'm not sure what acid tastes like, but it seems like the reaction that was occurring between the 2 ingredients was extreme). 

But, I kept going and sprayed the pan with cooking spray, and poured the batter in.  




I put it in the oven at 350 degrees for 30 minutes. It came out looking and smelling delicious! 

It tasted great, and I happened to have company over when it came out of the oven, and she enjoyed a piece, commenting on how moist it was! She is excited to try this easy recipe. It is hard to cut this nicely because of how fluffy it is, so a serrated knife might work best. We have just been scooping some out of the pan with our fork.



Please leave a comment with any suggestions of what could be added next time! Coconut might give it a more tropical feel, and I'm wondering if some kind of nut would be good in there?

  3. I've never heard of Angel Food Cake Mix, I'll have to see if it's available in the UK.

    1. I had never used it before, and there were only 2 options available at my local store. They were more expensive than the other box mixes too, but was fun to try! Hope you can find some there!

  5. I would be one to mess up a 3 ingredient cake.. did this and baked it about 25 mins and took it out and it was so puffed out, top is burnt and inside is not done.. i dont know if maybe i should have used a bigger pan :(

    1. Oh no! Did you use the crushed pineapple with 100% juice? The syrup one might cause that... or maybe the pan was too small. That's too bad! :-(
