FOOD-Loaded Potato Slices



I tried these for the first time over a year ago, and they have become a staple in our house. I had to make a few changes since my husband isn't a fan of parmesan cheese. 

Here's the recipe from the above link that I had pinned.

Easy Oven Roasted Potatoes

2 large potatoes, scrubbed
3 Tbsp olive oil
1 Tbsp Italian Seasoning
1 tsp salt
4 Tbsp Parmesan cheese

Slice potatoes into very thin slices (1/4 inch). big ziploc bag to coat the potatoes. Toss potatoes with olive oil, Italian seasoning and salt in a ziplock bag to coat.  Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown.  Top with Parmesan cheese and bake an additional 5 minutes. 

I follow this recipe, except for most of them I use shredded cheese and real bacon bits instead of the parmesan. I make a few with parmesan because I like it both ways. I always seem to slice mine thicker than the original recipe, but they always turn out delicious!

  1. Recently we been using some Marjoram on our potato dishes. But the Italian Seasoning does sound good.

    1. Wow! I have never heard of marjoram before (I just Googled it). I bet that would be good as the seasoning too! Let me know if you try it! :-) Thanks for stopping by!

    1. It seems much easier to me than trying to make mashed potatoes and gravy to go with my roast. Maybe because I'm used to it. It's fun to make for guests too. Thanks for reading!

  5. Kristin, I love this recipe and I change seasonings once in a while. I cut them American Fries style and use Montreal Seasoning with the olive oil But don't put extra salt because the seasoning has salt already. Delicious! I haven't tried it with the cheese, so I'll add that next time. Thanks!
