FOOD-Snickerdoodle Bread

Snickerdoodle bread.  Prep time: 5 mins Cook time: 35 mins Total time: 40 mins Serves: 4 loafs

This is one of my favorite Pinterest recipes! I tried it a couple of years ago with my regular bread pan (needed a lot more baking time), and requested mini loaf pans for Christmas specifically to make this bread! It is so delicious! 

Snickerdoodle Bread (recipe from
  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 cup butter (softened)
  • 2 cups sugar
  • 3 eggs
  • 1 tsp vanilla
  • 3/4 cup sour cream
  • 1 package Hershey's Cinnamon Chips
  • 3 TB sugar
  • 3 tsp. cinnamon
  1. Cream butter, sugar, salt and cinnamon until fluffy. Add eggs and mix well.
  2. Add vanilla and sour cream and mix well.
  3. Mix flour and baking powder in a separate bowl. Add to wet ingredients and mix until all combined.
  4. Add cinnamon chips and stir into batter. Set aside.
  5. Spoon batter into 4 mini loaf pans until about 2/3 full.
  6. Mix 3 T. sugar and 3 t. cinnamon in a bowl and sprinkle over the batter in each loaf pan.
  7. Bake at 350 for 35-40 minutes. Let cool before removing from pan.

I love making this dessert bread! I have tried it with chocolate chips instead of cinnamon chips (which are harder to find) and it turns out great both ways! 

Please let me know if you try this and how it works for you! Sometimes I have a little bit of a problem with it being very crispy on the outside, but not quite done all of the way in the middle. I'm not sure how to fix that.

    1. It works much better in the smaller pans because it's so moist that it stays pretty gooey in the full sized pan. It is so cinnamony and delicious! Thanks for reading!

  2. Do you think you could use a healthier flour as well? Such as coconut flour? Just curious as I try to avoid white flour.

    1. Interesting idea! I have no experience with coconut flour. Does it usually work as a substitute? This recipe is definitely not healthy! I wonder what would work for the sugar too (or half and half with a healthier option)...
